Easy Chocolate Truffle Balls
Course: Snack or dessertDifficulty: EasyThese truffle balls are so delicious and very easy to make. They’re also less expensive and made with higher quality ingredients than store-bought. Have a few as a special after-dinner treat! These little gems are sure to satisfy your sweet tooth, without derailing your nutrition goals.
Ingredients
1/2 cup milk (dairy or non-dairy milk of choice)
1 tsp vanilla extract
1 Tbs honey (or any liquid sweetener)
12 oz bittersweet chocolate (shaved or finely chopped)
2 Tbs coconut oil
1/4 cup unsweetened cocoa powder (for rolling)
1/4 c nuts or shredded coconut (for rolling)
Directions
- Combine milk, vanilla extract, and honey in a small saucepan; bring to a gentle simmer.
- Place chopped chocolate in a large heat-proof bowl, and pour hot milk mixture over it.
- Stir gently and thoroughly until all the chocolate is melted and smooth.
- Stir in coconut oil until melted and incorporated completely into the chocolate mixture.
- Refrigerate for 1 to 2 hours, until firm (but not hard).
- Line a baking sheet with parchment paper.
- Using a melon baller or a small cookie scooper, scoop out balls of the chocolate mixture and roll gently between your palms until a smooth and even ball is created.
Truffles can be made into any size, depending on your preference. - Place cocoa powder on one plate, and nuts or coconut on another.
- Take each truffle and roll half of them in the cocoa powder to coat; roll the other half in the nuts or coconut.
Notes
- Truffles can be served immediately, or stored in an airtight container in the refrigerator.
